About Us

Disco Kitchen was founded in Portland, Oregon, by Liberty Dilger, whose passion for food is deeply rooted in her Italian heritage. Raised by her mother and grandmother, Liberty learned to cook from an early age, developing a love for both the craft and joy of food. Driven by an entrepreneurial spirit, she transformed an old hot dog cart and discovered the joy of feeding people, bringing smiles through her flavorful creations. She began touring festivals along the West Coast, serving Italian street food and experimenting with exotic sauces, always incorporating nutritious ingredients from local farmers.

 

Today, Liberty caters events of all sizes across the Pacific Northwest, drawing inspiration from the rich flavors and spices of Mesoamerica, Italy, and Thailand. She emphasizes fresh, high-quality ingredients, cooking from the heart to deliver vibrant, unforgettable dishes.
